Madeleines
Shell-shaped French cakes that are soft, light, and buttery in texture. Exists in vanilla or lemon flavors. TIPS - Madeleines stay soft for 2–3 days in an airtight container. My advice: if they dry out a bit, pop them in the microwave for 5 seconds to restore their softness.

Cannelés
French pastry from Bordeaux. Caramelised crust, soft custardy center, flavored with vanilla and rum. TIPS - Cannelés should be kept during 2-3 days at room temperature in a airtight container to keep their crunch. My advice: to restore a perfect caramelized crust, place your cannelés on the oven rack at 430°F for 3 to 5 minutes, then let them cool for 5 minutes.

Bread
French bread, the traditional baguette or the rustic country bread. Crisp crust and chewy interior. TIPS - It is best eaten the same day. You can wrap it in a tea towel to keep it from drying out, then toast it to eat the next day or the day after.
