How should I store my pastries and bread?
Baguettes are best eaten the same day. You can wrap it in a tea towel to keep it from drying out, then toast it to eat the next day or the day after.
Cannelés should be kept during 2-3 days at room temperature in a airtight container to keep their crunch. My advice: To restore a perfect caramelized crust, place your canelés on the oven rack at 220°C for 3 to 5 minutes, then let them cool for 5 minutes.
Financiers stay soft for 3–4 days in an airtight container.
Madeleines stay soft for 2–3 days in an airtight container. My advice: If they dry out a bit, pop them in the microwave for 5 seconds to restore their softness.
Sablés should be kept until 3 weeks at room temperature in a airtight container (preferably in an airtight metal tin).
